Peppermint Hot Chocolate

4 – 1 cup servings

INGREDIENTS:

4 cups soy milk
4 Tb Dutch processed cocoa (Valrhona preferably)
4 Tb vanilla, unbleached or white sugar
2 tsp real vanilla extract
pinch salt
Peppermint Marshmallows (see below)

DIRECTIONS:

In a sauce pan, combine all ingredients, except vanilla and mix well with a whisk. Heat mixture to completely dissolve sugar and incorporate the cocoa. Do not boil the mixture. Serve in individual mugs.

In order to make Peppermint Marshmallows follow the recipe for Marshmallows and use about 10 drops of peppermint oil instead of vanilla extract (peppermint oil is highly concentrated. It can be found at most specialty food stores). Cut the marshmallows into ½ inch cubes and add a handful to each cup. If you do not want to make the marshmallows, you can simply add a drop or two of peppermint oil to each cup of hot chocolate.
