Seasoned Rice Wine Vinegar (Sushi Vinegar)

by Pierre S. Aoukar, MD
Posted: February 27

INGREDIENTS:

2 parts rice wine vinegar
1 part sugar
1/4 part salt

DIRECTIONS:

Recipes for dressings work better in proportions so that you can make as much as you want. For example, if you wanted to make cup of seasoned rice wine vinegar (which is what the sushi recipe calls for), you would use: 8 Tb vinegar, 4 Tb sugar, and Tb salt. You will need to heat the mixture slightly to dissolve all of the sugar.
