Pancakes

INGREDIENTS:

Aunt Jemima Whole Wheat (or Regular) Pancake Mix
Soymilk (regular or vanilla, Edensoy brand, preferably)

Fresh blueberries (optional)
Fresh strawberries (optional)
Dark chocolate chips (optional)

DIRECTIONS:

1. Preheat non-stick pan.

2. Use as much pancake mix as you would like and add soymilk until the mixture attains the desired consistency. DO NOT add eggs or oil as the box calls for. These ingredients are not necessary, nor are they desirable.

3. Spray the pan with nonstick spray and immediately pour a ladle of the pancake batter. At this point you can any ingredients you wish, such as blueberries or strawberries and occasionally it is OK to use dark chocolate. Flip the pancake when the one side turns a golden brown and cook the other side until golden brown.

4. Enjoy with real maple syrup or maple butter (concentrated maple syrup, does not contain butter).
