Tofu, Pan-fried

INGREDIENTS:

1 pound firm or extra-firm tofu, (not silken)
2/3 cup Asian Dipping Sauce
nonstick cooking spray

DIRECTIONS:

1. Slice the block of tofu into bite size pieces, about ˝ inch thick. Spray a nonstick pan over medium heat with cooking spray. Throw in the tofu and spray the tofu with cooking spray so that when you flip them over the will not burn. Cook on one side until light brown. Flip and cook on the other side until light brown.

2. Turn the heat up to high and add all the dipping sauce. Reduce the tofu in the cooking sauce until all the liquid has evaporated.

3. An alternative way to do this is to cook your sauce with the tofu. Once the tofu has cooked, add the garlic and ginger and sauté until browned. Add the remainder of the sauce ingredients, premixed. Reduce until all the liquid has evaporated.

4. The tofu is ready to enjoy as is, over rice, in a stir-fry, Asian salads or however you like.
