Garlic Sauce, Spicy

INGREDIENTS:

3 c. crushed pineapple with juice
1/3 c. orange juice concentrate
2/3 c. sweet soy sauce
2/3 c. dark aged soy sauce
1 whole head garlic, peeled, crushed
1/3 c. fresh or ˝ c. pickled ginger (rinsed), finely chopped
2 Tbs. extra virgin olive oil
10 dried red hot chili peppers, roughly crushed

DIRECTIONS:

1. Combine all ingredients except garlic, ginger and chilies in a food processor and blend until smooth.

2. In hot sauce pan, sauté garlic, ginger and chilies in olive oil until they just start to wilt. You do not want to brown the garlic. Quickly add the ingredient from step 1.

3. Bring to a boil and cook for 15 minutes.

4. Refrigrate indefinitely.
